There are several things that you can do. When you pour your batter into your pan, tap it onto the counter top to get the air out a little. Keep in mind that most people only use ONE of the following methods NOT all.
The most used one in many of my "baker" friends is
1. Bake even strips. These are found at your local hobby store, ie hobby lobby, michaels...ect. You soak them in water and wrap them around your pans to keep the middle from mounding up.
2. Lower your temp. 25 * and cook a little longer.
3. Put a pan of water in the oven along with your cake. some of my friends swear by this.
4. Some people no matter how hard they try just can't get a flat cake so they level it off using a long knife or dental floss...

You may not be able to prevent it, because that's a sign of a well baked and tasty cake. So you moreover might not WANT to prevent it. If you want the top to be flat so you can frost it easier just turn it upside down, or slice the top to be even, just running a butter knife acorss the top easily with your hand. It will even right out, and then you can either just throw away the scraps or put them in the middle. This way you still get the good taste of a fluffy cake, but also a nice look to the finished product. (If you really think it's rising too much and is actually a problem you may be over beating the batter before you pour it in to the pan. Also, make sure before you put the pan in the oven you are tapping it to release any air bubbles.)

it expands because the sides bake first leaving the middle to rise, the only thing to do is to level the cake after it has completed baking

Are you using a mix or not??? If from scratch(ha ha) leave out baking powder. If from a mix, lower the oven temp and cook it longer. like a 325 oven for an hour.
