Pesto salmon on a black bean and corn salsa.
So incredibly easy to make! Drain and mix a can of black beans with a can of corn. Mix with a container of salsa. Add a little cilantro and lime juice to taste. Place the salmon on top, skin side down (if it is still attached at all). Spread pesto in a thin layer over the top of the salmon. Bake in an oven for ~35 minutes at 350 degrees. Serve with couscous and a green salad.

I'm talking, a really good cut of steak, Roquefort sauce, fresh homemade chunky chips/ fries (UK/USA), nice fresh salad. Washed down with a good glass of red wine, finished of with homemade chocolate mouse. Delicious :)
