I do everything by guesswork...so don't expect exact measurements....I chopped up celery, a small red onion, a few pieces of diced carrot, a green pepper (red or yellow are ok and makes it look nice) a few leaves of cilantro or parsley (chopped) and either a can of tuna-drained or cooked chicken meat-I prefer thighs over white meat., salt, pepper, a few chopped black olives, mayonnaise, and a few anchovies...mix and enjoy....I vary the recipe a lot and add smoked oysters, or crab meat....add as much macaroni as you like....and this will refigerate well for two days....I am a widower and learned to improvise a lot...my son and I lived on these improvisations.

Macaroni pasta twists vegetable flavored
Cook in boiling water until tender, drain

Chop tomatoes, onions, green peppers and cucumbers
Add sliced black olives, shredded cheddar cheese and sliced pepperoni.
Toss with cooked pasta.
Add a bottle of Italian dressing to mixed pasta and vegetables Salt and pepper to taste
Chill and enjoy as a side dish or as the main meal with slices of garlic bread or bread sticks.

I like this one!

Spinach Pasta Salad

Servings: 10
1 (12-oz) package bowtie pasta
2 oz. crumbled feta cheese
1 (10-oz) package baby spinach leaves
1 (15-oz) can black olives, drained and sliced
1 tomato, diced
1 cup Italian salad dressing
Juice of one lemon
Salt and pepper to taste

1. Prepare pasta according to directions on package. Drain.
2. Transfer pasta to mixing bowl and add feta cheese, baby spinach leaves, black olives, and diced tomato.
3. In a separate bowl, mix together salad dressing and lemon juice, adding salt and pepper to taste, for the vinaigrette. Pour your vinaigrette over pasta and toss. Refrigerate for four hours. Serve chilled.

Put in things you like. Always good to have a little crunch so I'd go for diced celery or some type of toasted nuts. I always add shredded cheese because I like it. I also add diced green olives because I like those. I also add hardboiled egg because I like that as well. Sometimes I'll finely dice some tomato. It's your dish. Be creative. Try different things and use what you like.

or with sour cream:

(Use (planned) leftovers on a hot day if you don't want to spend too much time in the kitchen)
