These cookies will just melt in your mouth. They are so mild and delicate that they make a prefect side for tea.
1/3 cup butter, softened
1/2 cup sugar
1 lemon, zest of
1 egg, beaten
4 tablespoons lemon juice
3 cups all-purpose flour
1 teaspoon baking powder
1 tablespoon milk
confectioners' sugar, for dusting
Preheat oven to 325F.
Lightly grease several cookie sheets In a mixing bowl, cream together the butter, sugar, and lemon rind until pale and fluffy Add the beaten egg and lemon juice a little at a time, beating well after each addition Sift the flour and the baking powder into the creamed mixture and blend together.
Add the milk and mix to form a soft dough Pour the dough onto a lightly floured surface and divide into 5 equal pieces Roll each piece into a tube and shape into an"S" shape Place on the prepared cookie sheet and bake for 15-20 minutes.
Let cool on a wire rack.
Heavily dust with confectioner's sugar.

Lemon Sugar Cookies Recipe
1 cup butter
1 1/2 cups sugar
1/2 cup sour cream
3 cups flour
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract
1 tablespoon lemon juice
additional sugar
Cream butter and sugar.
Add sour cream; blend well.
Add vanilla and lemon juice or extract.
Add dry ingredients.
Chill 3 to 4 hours.
When ready to bake, preheat oven to 350 degrees F.
Grease cookie sheets.
Shape dough into small balls and roll in extra sugar.
Flatten balls using the bottom of a glass after arranging on cookie sheets.
Bake 10 minutes or until lightly browned.

LEMON COOKIES
1 cup butter
1/2 cup sifted powdered sugar
1 teaspoon lemon flavoring
2 cups all-purpose flour
1/4 teaspoon salt
Granulated sugar
2/3 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon finely shredded lemon peel
3 tablespoons lemon juice
1 egg, beaten
1 tablespoon butter, softened
In a large bowl, beat the 1 cup butter with an electric mixer for 30 seconds or until softened. Add 1/2 cup powdered sugar and lemon flavoring; beat well. Add flour and salt. Beat until well mixed. (If necessary, stir in last part of flour.)
Shape into 1-inch balls and place 2 inches apart on ungreased cookie sheets. Flatten to 2-inch circles with the bottom of a glass dipped in granulated sugar. Bake in 375° F oven for 8 to 10 minutes or until edges are lightly browned. Cool cookies on wire rack.
For filling, in a small saucepan, stir together 2/3 cup granulated sugar and cornstarch. Stir in lemon peel and juice. Cook and stir over medium heat until mixture is thickened and bubbly.
Cook and stir for 2 minutes more. Gradually stir about half of the hot mixture into beaten egg. Return all of the egg mixture to saucepan. Cook and stir for 2 minutes more; do not boil. Remove from heat.
Stir in 1 tablespoon butter. Cover surface with plastic wrap; chill.
To assemble cookies, spread about 1-1/2 teaspoons filling on flat sides of half the cookies; top with remaining cookies, flat sides toward filling. Store filled cookies in the refrigerator.
