I have three 5lb chickens that I want to smoke on the grill. I have a smoker that the coals are on the bottom and a water tray is above it. Then the racks for the food are next. I know that the temp of the grill needs to be above 350 and I know that the chicken needs to have a temp of 190 to be done, but I need to know when I should start them if I want them done at a certain time.

I smoke my chickens at 225 to 250F and it usually takes about 3 1/12 to 4 hours. When I take my chickens off the smoker using the 'shaking-hands' technique and I measure the internal temperature, it is always between 180-185F.

After an hour or so of smoking, brush the skin with a little oil, and again after about 2 hours. This helps keep the skin from drying out. Oh, make sure you smoke your chicken skin side up. If you wish to flip it over towards the end of the cooking time, fine.

We do "beer can chicken" on the smoker & keep the temp around 250 for 3 - 3 1/2 hours. The meat is so tender & jucy it will slide right from bones.
