Here is one variation:

These are the hands of your best friend. They are holding yours on your wedding day as you promise to love each other today, tomorrow and forever.

These are the hands that will work alongside yours as together you build your future.

These are the hands that will passionately love you and cherish you through the years, and with the slightest touch will comfort you like no other.

These are the hands that will hold you when fear or grief wracks your mind.

These are the hands that will give you strength when you need it.

May these hands always reach out with love, tenderness and respect.

May these hands continue to build a loving relationship that lasts a lifetime.

RE:
does anyone have the words to an anonymous poem "these hands" used in exchanging wedding vows?

Here's what we used in ours:

Tom and Becka, please face each other, and take each other's hands.
As you walk together hand in hand through the seasons in life, you will feel the gift you are to one another.
These are the hands of your best friend, holding yours on your wedding day; and your love is as strong, vibrant and promising as spring's first flower.
These are the hands that, with the passion and warmth of the summer sun, will work alongside yours, as together you build your home and raise your children.
These are the hands that will protect and guide you, dry your tears of joy and sorrow, as the garden of your love matures, its colors changing like autumn leaves.
And lastly, these are the hands that, in the winter of your life, aged with wisdom and experience, will still be reaching for yours, still giving the same unspoken tenderness and comfort with a simple caress, soft as the falling snow.

No but if you go to the National Library website you can search for any poem that was ever published.
If you still can't find it, I found a poem 20 years ago that is absolutely beautiful.
Also unknown author - for wedding vows.

This is the version that I used for my wedding:
"(Bride's name), please face (Groom's name), and hold his hands, palms up, so you may see the gift that they are to you. These are the hands that will passionately love you and cherish you through the years, for a lifetime of happiness. These are the hands that will countless times wipe the tears from your eyes: tears of sorrow and tears of joy. These are the hands that will comfort you in illness, and hold you when fear or greif fill you. These are the hands that will give you support and celebrate with you in your accomplishments.
(Grooms name), please hold (Brides name)'s hands, plams up, where you may see the gift that they are to you. These are the hands that will hold you tight as you struggle through difficult times. They are the hands that will comfort you when you are grieving. These are the hands that will passionatley love you and cherish you through the years, for a lifetime of happiness. These are the hands that will give you support as she encourages you to fulfil your dreams. Together, as a team, everything you wish for can be realized."

No, I will not. We're writing our own vows (and, in fact, our own ceremony), partly because we love to write, but also because we don't like the wording of the traditional wedding ceremony- we find it very old-fashioned and boring. I would never agree to "obey" my husband- I believe that we are both free-thinking individuals and neither of us should ever have to "obey" anyone- "obey" is a dog word, not a human word. We will promise to love each other and to stand by each other and respect each other's beliefs, values, and ideals, but "obey" will never even touch our vows.

here is a variation from a celtic handfasting/wedding:

Officiant:
"Bride, please face Groom and hold his hands, palms up, so you may see the gift that they are to you.

"These are the hands, young and strong and vibrant with love, that are holding yours on your wedding day, as he promises to love you all the days of his life. These are the hands you will place with expectant joy against your stomach, until he too feels his child stir within your womb. These are the hands that look so large and clumsy, yet will be gentle as he holds your baby for the first time. These are the hands that will love you and cherish you through the years, for a lifetime of happiness. These are the hands that will countless times wipe the tears from your eyes; tears of sorrow and tears of joy. These are the hands that will comfort you in illness and hold you when fear or grief rack your mind. These are the hands that will tenderly life your chin and brush your cheek as they raise your face to look into his eyes, eyes that are filled completely with his love and desire for you.

Officiant:
Groom, please hold Bride’s hands, palms up, where you may see the gift that they are to you. These are the hands that are smooth, young, and carefree, that are holding yours on your wedding day, as she pledges her love and commitment to you all the days of her life. These are the hands that will hold each child in tender love, soothing them through illness and hurts, supporting and encouraging them along the way, and knowing when it’s time to let go. These are the hands that will massage tension from your neck and back in the evenings, after you’ve both had a long hard day. These are the hands that will hold you tight as you struggle through difficult times. They are the hands that will comfort you when you are sick and console you when you are grieving. These are the hands that will love you and cherish you through the years of lifetime and happiness. These are the hands that will hold you in joy and excitement and hope. These are the hands that will give you support as she encourages you to chase down your dreams. Together everything you wish for can be realized.

Bless the hands that you see before you this day. May they always be held by one another. Give them the strength to hold on during the storms of stress and the dark of disillusionment. Keep them tender and gentle as they nurture each other in their love. Help these hands to continue building a relationship founded in grace, rich in caring, and devoted to reaching for perfect unity. May Groom and Bride see their four hands as healer, protector, shelter, and guide.
