This is my favourite recipe for fish curry I have used it with other fish if you dont like bass and it works just as well
Ingredients
1 tbsp olive oil
1 garlic clove, crushed
¼ red onion, sliced
2 new potatoes, sliced
2 tomatoes, diced
55g/2oz frozen peas
1 tsp turmeric
1 tsp chilli powder
1 tsp medium curry powder
1 vegetable stock cube
120ml/4fl oz water
salt and freshly ground black pepper, to taste
1 sea bass fillet, cubed (Prepared at the supermarket)
3 tbsp fresh coriander, chopped, to garnish
natural yoghurt, to serve



Method
1. Heat the oil in a large saucepan, over a moderate heat.
2. Add the sliced onion and garlic, and fry for one minute.
3. Add the sliced potato, and cook for a further two minutes.
4. Next add the tomatoes, peas, turmeric, chilli powder and curry powder. Stir well, and cook for another minute, before crumbling in the stock cube and pouring in the water. Stir well.
5. Raise the heat, and cook for 10-12 minutes.
6. Season to taste, then add the cubed sea bass fillet. Cook for four more minutes.
7. Serve with the chopped coriander and natural yoghurt, to taste.

Easy Coconut Curry Fish

A tasty and easy one dish meal. Nice served with steamed white rice.
1 tablespoon vegetable oil
1 large onion, chopped
3 garlic cloves, minced
2 teaspoons curry powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 (400 ml) can coconut milk (lite is fine)
1 (400 ml) can chopped tomatoes
1/2 cup fish stock
10 whole allspice
1 kg firm white fish fillets, chopped in to chunky pieces (I use Gurnard)
1/2 lime, juice of
2 spring onions (green parts only)

In a wok or dutch oven, heat oil over medium heat, cook onion and garlic for 5 minutes or until soft.
Add curry powder, salt and pepper and stir for 1 minute.
Add coconut milk, tomatoes, stock and allspice, bring to boil.
Reduce heat and simmer for 20 minutes.
Add fish, cover and cook for 10 minutes or until fish flakes easily with fork.
Discard the allspice, stir in lime juice and serve sprinkled with the spring onions.
4-6 servings

Fish curry

Ingredients

10 - 12 Boneless fish

8-9 Curry leaves

6- 10 cloves of Garlic, finely chopped

1 tsp. of Ginger paste

5 thinly sliced Green chilies

2/3 cup grated Onions

3 pureed Tomatoes

1 tsp. Mustard seed

1/2 tsp. each of red chili powder, garam masala & Coriander powder

1/2 tsp. Turmeric powder

2 cups of Coconut milk

1 tbsp. Vinegar

A handful of Coriander leaves

2 tbsp. Oil

Salt according to taste

Serve with

Hot steamed Rice

Method

1.Heat oil in a pan and season with mustard seeds over medium heat until they begin to splutter.
2. Add garlic and ginger and stir for a minute. Add green chilies & onions and sauté until brown. Add turmeric powder, curry leaves and tomatoes. Fry for 2-3 minutes.
3.Add the coconut milk. Bring to a boil.
4. Add fish, salt and vinegar. Cover and simmer for a few minutes till the fish is tender. Stir only once or twice and very gently to make sure that the fillets do not break.
5.Taste and adjust the seasoning. Garnish with coriander leaves and serve hot.

Try your local super market they normally have a section with just sauce so you can pick which one and all you do is heat it up and add the cooked fish and eat with rice .... Don't forget the chapatis ...yum !!!

go for a Thai based recipe, but remember fish is not really strong in flavour.
