Basic Quiche

5 large eggs
3/4 cup milk
1 frozen 9-inch deep dish pie shell
2 cups shredded cheese or chopped drained cooked vegetables or diced deli meat, any type (or chop up leftover slices) or any other cooked diced meat or ground beef or seafood or poultry

Preheat oven to 350 degrees Farenheit.
Beat eggs in a large mixing bowl.
Add filling and milk and mix well.
Pour mixture into frozen pie crust.
Place quiche on cookie sheet and bake on the middle oven rack for 45-50 minutes, or until top is browned and a knife inserted in center comes out clean.
Serve with a crisp green salad or maybe some fresh fruit on the side.

Quiche Lorraine - This is a simple recipe that i use alot.

Serves 6
Cooking time: 40 minutes

Ingredients
150g plain flour
Salt and freshly ground pepper
80g butter, cubed
½ tbsp vegetable oil
140g cubed pancetta or
Rindless, smoked, streaky bacon, sliced into strips
7 large eggs
400ml full-fat crème fraîche
3 tbsp finely snipped chives
Freshly grated nutmeg

Instructions
Preheat the oven to 180°C/gas 4.

Sift the flour into a bowl with a pinch of salt. Add the butter and rub into the flour until the mixture looks like damp crumbs. You can do this in a processor - return the mix to a bowl before continuing. Add 2-3 tbsp cold water, just enough to make a pliable dough. Knead lightly into a ball, wrap in clingfilm and chill for 30 minutes.

Roll out the pastry and use to line a 20cm-diameter, 4cm-deep flan tin, with a removable base. Keep any offcuts. Prick the base with a fork, cover with foil, fill with baking beans and bake for 10 minutes. Remove the foil and beans. Bake for 10 minutes more. Reduce the oven to 170°C/gas 3.

Meanwhile, heat the oil in a frying pan over a medium heat and fry the pancetta or bacon until very crisp. Transfer to kitchen paper to drain.

Separate four of the eggs. Whisk together four yolks and three whole eggs. Stir in the crème fraîche and chives. Season with salt, pepper and lots of nutmeg.

Plug any cracks in the pastry case with pastry offcuts. Beat one egg white and paint thinly over the pastry to seal. (Discard the other whites).

place the bacon over the pastry, pour over the egg mixture and cook for 30-40 minutes until just set. Serve hot, warm or cold.

This is divine:

I just use a premade crust from the store.

For filling
3 tablespoons unsalted butter
2 lb onions, halved lengthwise and very thinly sliced crosswise (10 cups)
1 1/4 teaspoons salt
1 teaspoon black pepper
1 cup crème fraîche or heavy cream
4 large eggs
1/2 teaspoon freshly grated nutmeg

Special equipment: an 11-inch tart pan (1 1/4 inches deep) with a removable bottom; pie weights or raw rice

Prepare filling:
Using a 12-inch nonstick skillet over moderate heat, add butter to skillet and cook onions with 3/4 teaspoon salt and 1/2 teaspoon pepper over moderate heat, stirring, until just wilted, about 2 minutes. Cover surface of onions with a round of parchment or wax paper (or cover skillet with a tight-fitting lid) and continue to cook, lifting parchment to stir frequently, until onions are very soft and pale golden, about 20 minutes. Cool 10 minutes.

Whisk together crème fraîche, eggs, nutmeg, remaining 1/2 teaspoon salt, and remaining 1/2 teaspoon pepper in a large bowl, then stir in onions.

Fill and bake tart:
Pour filling into tart shell, spreading onions evenly, and bake until filling is set and top is golden, 25 to 35 minutes. Serve warm or at room temperature.

Makes 6 main-course or 10 first-course servings.
