The meat of a sheep a year old or younger is generally known as lamb, whereas the meat of an older sheep is either hoggett or mutton depending on its age and characteristics.


In many eastern countries including India, the terms mutton and chevon refer to goat meat and not sheep meat.

Lamb — A young sheep under 12 months of age which does not have any permanent incisor teeth in wear.

Hoggett — A young male sheep or maiden ewe having no more than two permanent incisors in wear.

Mutton — Female (ewe) or castrated male (wether) sheep having more than two permanent incisors in wear

It's down to the age - if the animal is young then it'a lamb, but if it's older it's Mutton - if the sheep has had lambs then it's definitly mutton

Just the same as a woman, when she gets old and tough.

However mutton is wonderful with more flavour than lamb, it needs longer to cook.

Just like a woman. So don't be frightened to get old, it has it's compensations.

12 months about, after the first time it is sheared it becomes a ewe instead of gimmer, or tup instead of tup lamb.
