they put eggs here on dsplay outside of stores. Why and how is that?

Eggs don't have to be refrigerated.

They keep naturally for a certain number of days before starting to deteriorate.

Keeping them in the fridge slows down that process, so you get longer life out the eggs.

I keep my eggs in the fridge, but buy them from a non-refrigerated shelf.

Assuming it is not really really hot eggs don't have to be refrigerated.

Here in the UK, you will find them on the shelves, not in the fridge.

Actually, if you are going to cook an egg and it has been in the fridge, you should take it out before hand and let it rise to room temperature before using it.

Do they wash eggs as US does? Consumers would not buy eggs in their natural state.

As a child, my folks did not wash eggs and they preserved for a longer period of time.

Same was true before refrigeration.

If you leave eggs out they won't immediately go bad, but they will eventually and the idea of keeping them in the fridge just slows this process down a lot.

the eggs at the supermarket need to be kept refrigerated.
you dont know how long is been since they were collected.
a fresh egg taken right out of the chicken house will last you about 2 weeks and they are still considered fresher than at the supermarket.

They often dont in Germnay, and my grandmother doesnt. When she came to visit us, she kept the eggs out in our house, too. Think of it- like eggs in a birds nest, it wont necessarily "rot" from being out. But because these are non fertile, they will only last like that for a short time.

The don't have to be refrigerated right away, but if you want them to last longer you refrigerate them to keep the freshness.
