Mom use to slice the eggplant rather thinly, coat it in egg and bread crumbs.. fry it in hot oil, serve hot.. I use to use ketchup on mine. I love it that way!

I love eggplants cooked the italian way.. I'm not sure if I have eaten beets, though. I'm from the philippines and I do love eggplant zucchini
