An egg is two parts; a yoke and a white. The yoke is yellow, the "white" is actually clear/colorless.

It would be proper to say, "The yoke of the egg IS yellow." Or, "The scrambled yoke and white ARE yellow."

Egg yokes are yellow, not white. However, the proper syntax is "The egg yoke is yellow." or "Egg yokes are yellow."
