I usually just cook the rice in a rice cooker without soaking it. If I'm being lazy, I just replace some of the cooking liquid for the rice with the coconut milk and add the sugar and salt to the rice cooker at the same time. However, this does sometimes stick, and I don't usually use nearly as much sugar as in this recipe.

I make a good salad that uses mangos. I usually make it with grilled chicken in it. I think it would be good without the chicken too. I will type it as is in case he is not vegetarian. You could just add the meat to his and eat yours without.
Marinate boneless skinless chicken in Lawry's Mesquite marinade. Grill until done and slice into strips.
Fill a bowl with romaine or spinach leaves. Add a sliced mango (can use fresh or buy the already peeled in glass jars in the refrigerated produce section at the grocery store)
For the dressing, mix 2TBS olive oil, 2 TBS. white wine vinegar, and 1 tsp. sugar. It is really yummy. You can also substitute canned mandarin oranges for the mango.

You can make a mango shake:
-1 - Cup Vit. D milk
-Sugar according to taste
-half ripe mango (make sure you get it from an indian store not an american store)
-Ice chips
Mix all in a blender until it is thick and smooth. Serve cold.
If you want to you can take small mango pieces and put it on top as garnishing.
Enjoy

Just off the top of my head, I would suggest taking a good pumpkins soup recipe, and substitute mangos for the pumpkin. Be sure to use a recipe tha calls for cream, not water.
INGREDIENTS :
2 tbs. butter
3 tbs. flour
2 cups milk
1 onion, chopped
2 cups boiled pumpkin (1lb.)
1 tsp. sugar
Salt and pepper to taste
METHOD:
Melt butter and fry onion in it.
Add flour, salt, pepper and sugar and cook well.
Add milk slowly, stirring so butter and flour are well blended with milk.
Stir until smooth and thickened. Combine pumpkin with mixture, stir well. Simmer for 5 minutes and serve hot.
Serves 4. The cream of pumpkin soup tends to get very thick, you can add a bit more milk if that happens.
Mangos are also very good in Rice Pilaf.

In malaysia, they use green (before mangoes ripened - very sour) magoes, cut into slices. then dip magoes into thick sweet soy sauce (kecup manis) mix with sugar (chilli optional).
malaysian love this as it has a refreshing taste.mind you, too much of this is probably not good for you as you'll need quite a lot of sugar. anyway, just have a taste and see if you lilke it.
