I usually wipe it off with a damp (barely wet enough to notice) sponge and a little bit of soap, then air dry it. But then again, I usually don't have to really clean them too often. When I use the mats, I put a piece of decorative tissue paper or something between the food and the mat, so I only have to clean off what makes it's way off the paper.

Press it to the bottom of the sink in an inch of warm water. Use a little scrub brush such as those sold to clean fingernails. Get the brush at any kitchen supply store. Rinse.

I would wash it with hot soapy water, then rinse with with hot water and sanatize with steam or boiling water for at least 3 minutes. This should get rid of any bacteria. Bleach water solution would work better but it may cause the bamboo and string to fall apart sooner.

Some dish soap and warm water is good. But I always cover my mat before using it. I use saran wrap, so that the mat never gets food on it :o)
