I make this quite often. If you have sauce left over, just freeze it for next time.
Carne Asada Tacos
Serves 6
INGREDIENTS:
1 1/2 pounds boneless beef top sirloin, cut into thin bite-size slices
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
crushed red pepper to taste
1 lime
1 (28 ounce) can tomatillos
2 fresh jalapeno peppers, seeded
4 tablespoons canola oil, divided
1 (10.5 ounce) can beef broth
12 (6 inch) corn tortillas
1/2 large onion, chopped
2 tomatoes, chopped
1 avocado - peeled, pitted and sliced
1 bunch fresh cilantro, chopped
1 lemon
DIRECTIONS:
Place sliced meat into a shallow bowl, and season with salt, black pepper, and crushed red pepper. Squeeze the lime juice over the meat, and turn until evenly coated. Cover, and refrigerate for 30 minutes.
In a blender or food processor, combine tomatillo and jalapeno. Puree for 15 to 20 seconds, or until thick. Heat 1 tablespoon oil in a large skillet over medium high heat. Carefully pour in tomatillo mixture. Cook, stirring frequently, for 5 minutes. Stir in beef broth. Reduce heat, and simmer for 20 to 30 minutes, or until mixture coats a spoon. Transfer mixture to a serving dish.
Heat tablespoon oil in a large skillet over high heat. Stir in 1/3 of the beef, and saute for 1 minute. Transfer to serving dish. Repeat with remaining beef. Meanwhile, heat tortillas in the oven or microwave, according to package instructions.
To serve, place two tortillas on top of each other. Add desired amount of meat, spoon over some tomatillo mixture. Top with onions, tomatoes, avocado and cilantro. Garnish with a wedge of lemon, to be squeezed over taco before eating.

If you don't want to eat meat (or want something differant) Try tacos with lentils cooked in taco seasoning. And, of course, add all the fixings - shredded lettuce, tomatoes or fresh salsa, sour cream, olives, fresh cilantro...

LOWFAT VEGGIE TACOS
3 T. olive oil, 1 c. chopped onions
6 big fresh mushrooms, 1 green pepper, chopped
6 fresh broccoli crowns, 1 can lowfat refried beans
Low Fat Taco Shells...
Saute everything but beans and tacos...Add beans after the
veggies are soft...(around 15 minutes)...Add beans...MIX well, and saute 'til hot...Fill taco shells with mixture...Serves: 3
Prep tie approx. 30 minutes...

ummmm, go to taco bell it does'nt take a rocket scientist to make good taco's. All u do is cook meat, & add veggies, cheese, & some kind of sauce

brown hamb
drain grease
add seasoning packet and follow directions
when finished put in blender and blend
empty blender and pan up some refried beans if you wish
use large tortilias
use sour cream
cheese
tomatos
lettuce
olives
and anyother codments you want
fold and place on a hot pan and turn when the side is light brown

u take sum meat and put it in a pan and buy a taco kit and then mix the mix in then you put it in a bowl then you put ur fav topins on and eat up sooooo simple

cook two pounds ( or one ) hambuger meat -drain add McCormick's taco seasoning with one cup water ( or more if you want too )
lettuce , tomato, onion, hot sauce, enjoy 20 -30 mins cook time
