Here's a dish I made last weekend after a trip to the farmer's market.
Endive Pickup Salad

Salad:
1. wash, dry, and layer leaves of two types of endive, tomato, green onion, egg, bacon & bleu cheese crumbles;
2.dressing: whisk together 1/8C each of lemon juice and Kirin, 1 T of prepared ginger, 1 pinch each of cayenne, sugar, dried coriander, course salt & fresh cracked pepper; drizzle 1/3 EVOO as you whisk vigorously to form emulsion.
3. Drizzle over salad and serve, allowing folks to pick up leaves from the dish.

Grill some spiced chicken breasts drizzled with honey, along with grilled veggies (broccoli, cauliflower and zucchini). Slice or cut up the veggies and put them in a foil pouch with butter and grill along with the chicken. When you serve sprinkle the veggies with Parmesan cheese, and serve with bread and lemonade. Easy, tasty and filling!
