Hey guys, I'm a relatively new vegan and even though I've been eating tofu all my life, I never thought of categorizing it before. It was just all... "tofu" to me. Well, I have this really nasty penchant for baking, and a lot of these recipes call for specific types of tofus. It's too bad that I can't differentiate them, though. :( Does anybody know of a good website which gets really detailed in the intricacies of tofu?

firm vs. silken seems to be the biggest breakdown. in each one there will be differet gradients. the wikipedia entry on tofu breaks it down between asian firm (usually packed in plastic tub with some water), western firm (usually shrink wrapped), and silken (usually in a box).

for baking, i'd go with the "western firm" and still press it. for stirfry's, stick with either firm, for soups the silken sometimes is better. if you're going to blend it for a custardy something, definitely use silken.

congrats on switching to vegan. it can be rough at first, but once you get the habit, it's prett easy.

Silken tofu has a very smooth consistency. It's only good for pudding, dips and sauces. It is marked as silken on the container. You can buy Mori Nu brand in shelf stable paperboard cartons. Other than that, the other type is about firmness. Lastly, there are some of "eat from the package" flavored varieties. Soyboy makes the best baked flavored stuff. I love the carribean flavor cubed up on a salad.

check out the nasoya website. I bet they will have recipes for the different types there. I know there is a firm and silken type and I think the silken is mostly for shakes and smoothies etc.

EDITED: They have lots of recipes for each type of tofu : )

try foodnetwork.com they will probably give you the different firmnesses and tell you what they're for.. just search for it when you get on the site.

good luck being a vegan....thats like totally hardcore right there, i praise you for doing what you are doing. and hooray for eating tofu, some ppl think its nasty, but i like it. i grew up with it. i'm asian and my mom makes it alot and its soooo good!!

the only differences I know about tofu is the consistency. firm, hard, soft...etc
