Probably because most vegetarians have not been raised that way and there is a cultural expectation of what a meal should contain and what it should taste like. If we were raised in southern India, for instance where vegetarianism is more common, then we would have a different idea, or if we were raised in a buddhist family in Hong Kong we would have a different idea of what a meal should contain. After we have a few generations of vegetarian families we might see that change. I know mine don't taste like meat, but meat analogs like hot dogs remind me of family holidays as a child.

Alot of vegetarians still like the taste of meat, but value not killing over that, so manufacturers and chefs, etc. often make foods and dishes that taste like meat, specifically for vegetarians.
Also, vegetarians still need protein, and foods with alot of protein, or fat, have a specific taste to them. This taste is most often associated with meat since it has a good bit of both, but nuts, cheese, and some breads also have this taste. Most meals try to incorporate protein and fat into them as part of the main course, because otherwise it isn't as filling. Vegetarian meals have this too.

I'm vegetarian, and the meals I make NEVER taste like meat. If I was going to eat something that tasted like meat, I'd eat meat. But I don't. There are tons of meatless options out there that don't need meat and don't taste like meat. Okay, I just typed "meat" so many times I'm getting nauseous...

That is simply not true, yes there are foods made with soya which are similar to say Chicken or Ham, but there is plenty of variety in a Vegetarian diet without the need for these 'taste like meat' foods. I have been a vegetarian all my life and have plenty of choices.

Because vegetarians still crave meat but they don't want the death of an animal on their conscious. If you ask me, it seems like cheating with all the meat supplements out there.

Try the vegetarian dishes from countries like India where a major part of the population are vegetarians. They never taste like non-veg dishes.

cause lots of vegetarians love meat but they hate the death the the animals so they eat stuff that taste like animals but they dont eat real life animals.So thats why lots of vegetarians eat foods that taste like meat.
