Vietnamese is my favorite, because of its fresh ingredients, very little fat or oil and tastiness. Fortunately it can be had in almost every city in the US.
Try the Pho Tai, its a hearty clear soup with all kinds of good things in it, like thin noodles, slices of rare beef or well cooked beef if you prefer. It is served with a side dish of bean sprouts, fresh herbs like cilantro and Thai basil and some hot peppers. You take the cilantro and the basil, strip off the leaves and put as many in your soup as you like. Then throw in a good helping of the bean sprouts and - if you like it hot - some of the peppers. On the table there is always fish sauce (which is NOT soy sauce!) to enhance the taste of the soup.

I have not tried much Vietnamese foods, not a huge fan of Japanese food.

Vietnamese, with Chinese in close second.
Vietnamese food is always very fresh and light, but SO flavourful. There's this place by my house and it's killa food. I could go for some spicy tofu salad or vermicelli right now...

I like them all, ALL the food in the world! But out of your choices, I would choose Japanese, right now, anyway. I love sushi!
