Hi Troy. I'm a foreigner living in Thailand. I live with a Thai family, and they cook every day.
I cook my own food..
They use lots of chillies, and coriander. Anything that can be grown will be eaten at some point or another. Thais hate waste.
A lot of ingredients are mixed and pounded using pestle and mortar.
Lots of dishes are cooked at each meal, and they eat sitting on a mat on the floor. There are no individual plates or bowls, everybody just digs in.

In addition to above, also lots of vegetable of various kinds. and frequent use of coconut milk, ginger (or galanga), lemon grass. One of my favorite Thai dishes is Tom Ka Gai, a coconut milk based chicken soup.

Some of it is spicy...some of it resembles Chinese food, and they also use a lot of peanut ingredients in the cooking.

Fish sauce, black bean sauce, pork, rice noodles. The peanut sauce thing is an Americanization, they don´t use it in Thailand.
