I can't see you using more than an ounce of meat in each one... lets see, 16 ounces in a pound, 4 x 16 = 64. 4 lbs. ought to do it, and still some left for a couple sandwiches. Hope this helps.

Springtime Ham Quiche Nested Recipe: Pie Crust
Serves 6 - 8
Recipe Ingredients: Springtime Ham Quiche
1 - 10" Pie Crust (recipe follows) * (Prepared pie crust may be substituted)
2 Tbs. Butter
1/2 cup Shallots diced
1 small Clove Garlic finely minced
5 cups Zucchini trimmed and thinly sliced
1/2 lb. Farmer John® Cooked Ham finely diced (about 1 1/2 cups)
5 large Eggs
1/3 cup Sun-dried Tomatoes packed in oil (drained)
3/4 cup Whole Milk
1/2 cup Heavy Cream
1/4 tsp. Salt (or to taste)
1/4 tsp. Black Pepper
1/4 cup grated Parmesan Cheese
Paprika
Recipe Instructions:
1: Preheat oven to 350° F. Line a 10” quiche tin (or pie dish) with crust, then line foil. Add dried beans or pie weights to weigh down the crust and bake for 20 minutes. Remove weight and foil from crust.
2: In a large skillet over med-high heat, melt the butter and add shallots and garlic. Cook until translucent, about 3 minutes. Add salt, pepper and the zucchini and cook for about 5 minutes, stirring gently. Add the ham and remove from heat. In a separate mixing bowl, add the eggs and beat well. Add sun-dried tomatoes, milk, cream, salt and pepper. Scrape into zucchini mixture. Increase oven to 375°. Pour zucchini and egg mixture into crust and sprinkle with parmesan.
3: Place quiche on a baking sheet and bake for 30 minutes. Reduce oven to 350°, sprinkle quiche with paprika and bake for another 15 minutes.

Muffin size huh -- I would guess about 1/8 cup per muffin, so that would be about a 6-7lb ham. But why not bake a larger one and enjoy the extra!!

depends on the ham--vchopped, shredded, sliced, wafer sliced?
depends also on how much ham per muffin cup-
-I would think a couple tablespoons per cup would be more than enough--I dont remember how many TBLS per cup but you should be able to find a conversion chart--
or try about 3 lbs. good luck--sounds interesting.

2 -3 pounds of ham should be more than enough. If you buy a bigger one, then serve the excess on the side or make some scalloped potatoes or bean soup with it.
