Get some of the Mollie Katzen "Moosewood Cafe" books. They are excellent and demonstrate a lot of variety. Once upon a time I was a vegetarian. Often, though, I was the only one eating veggie so I came up with some meals that didn't require eating leftovers, were quick and fairly economical. Some of my favorite meals from my time as a vegetarian (I am lapsed at this point):
A twice-baked potato stuffed with broccoli and cheese. Just bake a potato, allow it to cool until you can handle it. Cut off the top and scoop out most of the insides. Transfer the insides to a bowl, add broccoli florets (even frozen work well - you could also do broccoli/cauliflower mix) and your favorite cheese to bowl and combine with the potato. Add salt and pepper to taste, and if the potato mixture is too dry to hold together at all, add a little milk or vegetable broth. Stuff the mixture back into the potato and pop back into the oven for 10-15 minutes. You can also stuff squash (particularly butternut squash) and large mushrooms.
One of my favorite veggie sandwiches used one of those veggie burger patties (try around to find the one that suits you best. I thought Boca tasted most like meat, but Gardenburger had the best flavor). Saute the patty in a pan over medium heat alongside some sliced mushrooms (the patty will probably be done before mushrooms - no worries, just remove the patty to a plate and wait for the rest to be done. When the mushrooms are soft and have browned a bit, salt and pepper them and then put on top of the patty. I usually added a slice of mozarella or swiss cheese and ate it on a Kaiser roll or hamburger bun dressed with mayo. Add the fixings of your choice (my favorite was sliced tomato, a thin slice of raw red onion, lettuce, and sprouts, but sometimes I added some avocado also.
Pita bread with hummus, baba ghanouj, or some other dip and a side salad. If you have never had these dips I highly recommend them. Good recipes that have been rated by people who tried them out can be found on www.epicurious.com and www.recipezaar.com. Since these sources are searchable, they are good sources for all sorts of new recipes. Don't be afraid to try different cuisines! Indian food especially is notorious for being excellent vegetarian fare. You must try it.

Are you serious? You say that you are a vegetarian and eat pasta until you are tired? Added to that; nt only do you not like tomatoes or onions, soy or tofu, but you, as a vegetarian classify them as crazy foods? OK?

Well, this isn't exactly healthy, but I love fried eggs, toast and hash browns. You can scramble the eggs to make it healthier... wait, no I don't think that is heather because you're still frying them and you're adding milk. So in a way that's worse.
Do you like Indian food? This isn't quick, nor even healthy, but saag-paneer is by far the most delicious vegetarian dish ever created. No tomatoes, it may have onions but if so they aren't noticeable. It's a magical spinach and cheese dish, and I don't know why it's so good but it-is-DELICIOUS.

I know you don't care for tofu-or have you actually tried it?I know a lot of people who make retching noises when I mention it-who have never put it in their mouths.A vegetarian/vegan diet can be an excellent way to expand your food horizons.I love roasted red bell pepper hummus in whole grain pita halves, tempeh(a soya food-but good) stir-fried with broccoli, baby carrots, and snow peas; a big bowl of pinto beans topped with monterey jack cheese and a jalepeno on the side;or sandwiches of portabello mushrooms and mozzarella.Experiment!

What about hummus or baba ganoush? Both of those are vegetarian and quick. Just get some pita chips or bagel chips and make or buy a container of it and voila, you have a meal.
You can also make eggplant lasagne, vegetable stir fry, or quesadillas. All of those go over great at my place [a lot of my friends are vegetarian or vegan so I'm used to cooking things for them.]

How about a frittata?
Here's one recipe:
INGREDIENTS:
1 (10 ounce) package frozen chopped spinach, thawed and squeezed thoroughly to remove liquid
4 eggs or equivalent egg substitute
1 cup part-skim ricotta cheese
3/4 cup freshly grated Parmesan cheese
3/4 cup chopped portobello mushrooms
1/2 cup finely chopped scallions with some green tops
1/4 teaspoon dried Italian seasonings
1 pinch Salt and pepper, to taste
--------------------------------------------------------------------------------
DIRECTIONS:
Preheat oven to 375 degrees.
In a large bowl, whisk together all ingredients until well mixed. Spray a 9-inch pie plate with cooking spray and fill with the spinach mixture.
Bake for 30 minutes, or until browned and set. Let cool for 20 minutes, cut in wedges and serve.

Brown rice or potatoes or full grain breads are good alternatives to "pasta." You can go with bean and vegetable combos with all of them. You pretty much need beans, cheese, or nuts to fill your protein requirements. So-red beans and rice, chinese stir-fry and rice, baked potato with cheese and brocoli, peanut butter or cashew butter and bread, peanut butter stew with potatoes, grilled cheese sandwiches, black bean tortillos.....
