My husband and I recently became vegetarians. I need to pack him a lunch every day but it's hard for him to gain access to a microwave, so I need cold suggestions.

Im looking for something that would be nutritious as well as filling. I dont want to send him out with pasta salad (which he would gladly eat but doesnt provide much more than carbs and fat).

HELP!

There are several different ideas I could share with you.
Wraps: Flavored wrap (I use tomato/basil) found at Publix Supermarkets. Spread with either humus, tahini or mayo.
add sprouts, sliced tomatoes, julienne cucumbers, sliced pickles.
roll wrap, and eat.
If he's taking it to work, I prepare my husband's by packaging in little zip locks all the condiments, put the wrap in a large size gallon zip lock and let him build it himself when he's ready to eat it.

Taco Salad: Tortilla Chips, shredded cheese, avacado tomatoes, olives, black beans (or refried), onions and whatever else you like in a taco salad. Again, separate the items in baggies and have him build just before eating.

Pack an apple and some frozen grapes for a snack or a "dessert" and then do some raw veggies. Make a quick salad in the morning and throw some dressing in a small container, though he will eventually get sick of salad. Who says pasta salad has to be full of fat and only carbs? Buy fat-free Italian Dressing to toss over the pasta salad (trust me, it tastes the same; even better) and cut up a few olives. Mix some rasins in and dice carrots, onions, tomatoes, etc. to throw in. It's best to make all of the side dish-like things up on Sunday night for the whole week (like the raw veggies and the fruit) and put into containers, labeled with masking tape, so he can pull out what ever he wants and then make a quick sandwich or something, throw it in the lunchbox, and go. Try doing PB and J sandwiches, lettuce and peanut butter, lettuce, cheese, and mayo sandwiches, etc. Spice things up, literally. Mix prezels in a bag with chyenne pepper, try adding nutmeg to PB sandwiches, just experiment. Buy some canned olives, all sorts of interesting fruit, and lots of veggies with some Diet Ranch. You can also buy some 94% fat-free popcorn by ACT and cover it in some ranch powder to make it taste great. Adding the ranch powder does wonders for bland-tasting foods.
