Funny you should ask, I was looking into this last night.
Mentos has a very porous surface, hence a very large surface area. Inside of Pepsi and other sodas, there are little bubbles of carbonation trapped in the liquid by the water molecules. The bubbles are unable to expand until the Mentos are dropped in and break the surface tension of the bubbles. Bubbles begin to form all around the surface of the Mentos, and they expand and are more easily able to escape. The bubbles of carbon dioxide quickly rush to escape the liquid, shooting a lot of it out of the bottle in the process.

any carbonated liquid does as the bubbles make the mentol expand...... i think
