Guacamole is a mexican dip great on... pretty much everything, though the most common use is with chips.
It's made of avocado, lemon or lime juice, or both, garlic, onion (red, white, yellow, green, or all of the above... er, behind? :)), salt, and pepper. You can add tomatoes, peppers (hot, dried red, or bell), herbs (some people like to use cumin and LOTS of people like to use cilantro)... anything you want. It's pretty dang flexible.

The one I use, though, is based on the recipe from "The Simple Little Vegan Slow Cooker":
2 Avocados
(My add-in:) about a 1/4 Cup silken tofu
1/4-1/2 C diced onion
2 T lemon/lime juice (I prefer lemon)
1 Garlic clove, minced
Salt and pepper to taste
Puree all ingredients till smooth.
The tofu I add does nothing but add nutrients; it dosn't effect the taste, etc.
Lots of people prefer chunky guacamole, in which case you would blend 1 of the avocados (and tofu if you're using it) with the onions, lemon/lime juice, garlic, and w/e other seasonings ('cept fresh herbs; those you can mix in by hand with:), then just roughly chop the rest of the ingredients and mix it gently by hand, so as not to blend the avocado.

It's pretty much been said... but since this is in the veg category, I'll add a warning. Many, many commercial brands of guacamole have gelatin in them! Unless you ask at a restaurant, you have to assume that they're not making their own and that there may be gelatin in there. Fresh is best!

When I make it I take 2 avocados,1 diced onion,2 diced tomatoes and 4 diced Jalepenos and add 1/2 cup of lemon juice and mix well then chill for at least a half hour. Oops I also add 1 cup chopped ,fresh cilantro also.

When I'm in a hurry, I'll mix in a bit of my fresh salsa. It has the tomatoes, onions, garlic, cilantro, chile, and other spices I normally put in guacamole.
I pick the ripest avocados in the store. I also add lemon or lime juice (just a hint, to keep it from turning brown or black, if it lasts that long), and salt, for flavor.
Now I'm going to the store! You've made me hungry!

I like to use two or three avocados diced, one chopped sweet onion, two or three small tomatos diced, some chopped fresh cilantro, two tablespoons of lime juice, two pinches of salt, and a good dash of garlic powder. Mix it up. Mash the avocado a bit, but leave it a little bit chunky. And voila! All you need now is some tortilla chips and a beer.

3 to 4 avacoados (need to be ripe)
2 to 3 Jalepenos (depending on spice preferance)
3 tomatillos (boiled first)
1/4 white onion
2 cloves garlic
cilantro
salt to taste
blend all together

Here's a simple recipe
1 avacado
1 medium sized tomato
a splash of lemon juice
a dash of salt and pepper
and some cilantro or parsley really freshmens it up
just mix those above ingredients and really it makes such a difference to have it! good luck!

the most simple & delicious recipe:
cut up avocado
add a fresh, diced tomato
squirt juice from 1/2 a fresh lemon
