what makes any food exotic is the combination of ingredients you use to prepare that particular food. Any combination out of the ordinary will make a dish exotic. Specially if you add kiwi, mango and other fruits not grown in the US

Actually the word exotic is something... in my opinion...that describes something out of the ordinary and something which has a foreign country stigma. Also.. some people feel that some spice that is used in India adds a bit of exotic-ness to a food. In general... any recipe from a foreign land(beef, shrimp, etc) is called exotic if it is OUT of the normalcy that we have in the U.S. Also if you live in France, some of the dishes that we have in the U.S. can be called exotic to them if it is NOT THE NORMAL French dish... (for example)

It is a food that you don't just pick up from the grocery store. You might have to special order it from some where. Or it might be a food at a resturant that you can't find anywhere else.
