To avoid tears, make sure your kitchen is well-ventilated so the sulphuric compounds released from the cut onion are quickly dispersed. Use a small fan for this if you've got one.
A truly sharp knife makes this process a breeze. Try not to use cheap or dull knives.
All onions, including shallots, are basically the same and can be cut the same way. If using leeks, discard the dark green part and wash the remaining white part well between each layer. Leeks don't need to be peeled.
Warnings:
Do not cut onions in half horizontally, so the stem is on one half and the root end on the other. Onions are difficult to work with and to keep together when cut this way.

Keep the root on while peeling and chopping. A variation of this is to cut from the top leaving the root end intact until the last cut!
Be in a well-ventilated place and cut fast!
Use a good, sharp chef's knife. It glides through the onion with ease, allowing less of the compounds that cause tears to come out.
Wear a pair of safety goggles or a cheap, disposable painter's mask.
Put a slice of bread in your mouth, with half of it sticking out to "catch" the fumes.
Put some white vinegar on the chopping board before cutting.
Burn a candle immediately adjacent to where you're cutting. The tear-causing gas is drawn toward the heat source.
Purchase pre-chopped onions.

If you cut the onion by the sink leaving the tap running. the water will attract and absorb the particles of the onion that normally end up in your eyes.....
They say you can also cut the onion under water but I find that quite awkward..... and leaving cold water running next to you has the same effect...
No need to cry... Its just an onion... LOL

Apparently if you run an onion under the tap while you're peeling it, it won't make your eyes sting. Maybe the same applies to cutting up an onion... try doing it in a bowl of water or something.

I wondered the same thing and I was told to run the onion under cold water before cutting into it. I haven't tried it yet, though. Good luck.

This is weird, but works for me: When you cut the onion, stand as close to a running tap as possible (cold water) and keep the water running all the time. No tears!
Swimming goggles work, too, but sheesh.....

I always try to breath through my mouth rather than my nose when cutting onions, and have always found this to be effective. However if you are cutting alot of onion I would suggest goggles.
