QUICK!! I always keep some chicken breasts cooked and frozen so I can add whatever I am in the mood for to it and then do quick veggies and salads and bread. If I don't have time for a dessert, I usually have some cookies or ice cream or maybe just not have dessert.

Quick and easy doesn't have to mean low budget. I would get really good steaks for grilling, make a nice summer salad, and grill some veggies, lastly, throw together seasonal fruit dessert and you ARE chef of the year.
