I was thinking of using a mandoline, but I need a decent-sized thickness.
Any suggestions?

mandolines can be set to a pretty thick slice. a v slicer is cheaper though, and would also do the trick- that can also be set pretty wide.

A mandoline is the best way to get consistent slices quickly. You can adjust the thickness on the blades, no problem.

I use a knife, but I like mine thin. Try a food processor or the slicin slot on a four sided grater.

I'm glad everyone elses cukes are coming in, I'm not having much luck this year, but the tomatoes and peppers are Great!

Down with the food processor? Oh that wouldn't work, check out Bed,Bath and Beyond - they have a unit that should do the trick.

Are you serious, if slicing cucumbers is challenging you should you be in the kitchen or left unattended?

Use the hard boiled egg cutter. Cut the cuke in chunks and then run it through there.

use the kind of cheesegrater that has a slicing bit on the other side. you will get consistant thickness.
