Tomato Tart
1 sheet frozen puff pastry
about 4 medium tomatoes (I like to get the different colored ones)
4oz. chunk smoked mozzarella
big pinch kosher salt a good dusting of pepper, basil and garlic
When the pastry is thawed, lay it out on a baking sheet, and poke holes with a fork all over the center area, leaving about an inch all the way around. Layer tomatoes and cheese in rows until the pastry is mostly covered (except edges). Dust with salt pepper, garlic and basil, also sprinkle just a touch of balsamic vinegar and olive oil over top. Bake in a 400 degree oven 20 minutes. Very yummy, and ovo-lacto vegetarian safe.

Look for polenta (it's a dense cornmeal paste that comes premade like a sausage for convenience). Slice it, spread the slices in a casserole dish, and layer on top fresh tomato, mushrooms, spinach, garlic, squash, and cheese (if it's not vegan). Bake til firm. If you search polenta and recipe I'm sure you'll find plenty. It's used in Italian cooking. Can be made small for appetizers or larger for main course.

Diabetic Banana Pudding
1 Box Vanilla Wafers
4 Bananas
2 Cups skim or Low Fat Milk
1- 12 ounce Cool Whip (low fat)
1- 8 ounce Sour Cream
1 Lg Instant Vanilla Pudding Mix (low fat)
(1.) Combine milk and pudding mix in bowl.
Mix well. Set aside and let thicken
(2.) Mix well Sour cream and cool whip together.
(3.) Combine mixture to pudding mix.
(4.) Layer 1/2 of bananas and wafers in dish.
(5.)Add 1/2 of pudding mix
(6.) Repeat steps 4 and 5

Morning star Farms makes all kinds of fake"meat" products. I use the veggie crumbles in just about anything that one might use hamburger in. And it doesn't even have to be browned first. For instance hamburger helpers just throw in some veggie crumbles and the rest of the required ingredients and cook. or make lasagna minus the meat. add squash, zucchini, or broccoli

A diabetic can have angel food cake, strawberries sweetened with Splenda, and cool whip. Everyone should like that one.
