Hope you are in England for this! sainsburys sell some dried lentils, yellow split peas, and other stuff all in the same section, get a few backs, they are cheap and will last and last
Take a handful of each, (I am a man so I don't measure ingredients) and put them in a pan of boiling water, boil for 40 minutes, get ready some sweet pickle, like branston, and some pasta,
10 minutes before the lentils are due, throw in two handfuls of pasta, (any type but not spaghetti) and a tin of chopped tomatoes and at least two desert spoonfuls of the pickle
Sieve the whole lot and put into a shallow baking dish with grated cheese over the top and cook under a grill until the cheese browns.
serve it like with a side salad and new potatoes

1 sweet potato
1 purple potato
1 small onion
1 carrot
1 small zuccini
1/2 red pepper
1 handful of green beans
2 mushrooms
2 cloves garlic, minced
1/4 cup olive oil
1 handful dried rosemary
pepper
Chop the sweet potato, purple potato, carrot and onion into chunks (1" approx). Take some of the oil on a paper towel and wipe the inside of a lasagna pan. Crush the rosemary and add to the rest of the oil. Add the garlic and a few hearty shakes of pepper. Put the cut veggies in a colander and pour the oil over. Toss to coat and let the excess oil drain out. Pre-heat oven to 325°F. Put the veggies in the lasagna dish, cover w/tin foil and bake for 45 min.
Meanwhile, cut up the zuccini and pepper into similar sized chunks. Cut the ends off the green beans. When the 45 min is up, take out pan and add the zuccini, pepper, green beans and mushrooms. Stir to coat. Turn oven to 450°F. Put the pan back in, uncovered, for 20 minutes or until veggies are soft. Yummmmmmm!
Next time I will use more red pepper, mushrooms and onions. I threw the mushrooms in as an afterthought which is why I only had 2. And the onions were so good, next time I'll use a large one, or two small ones. I made this intending to freeze small portions for Bridget, but between the two of us, we polished it off for breakfast and lunch :-)

A quick meal which always seems to impress dinner guests is:
Mushroom Stroganoff served over egg noodles.
I make the stroganoff by sauteeing the mushrooms in butter until soft but not slimy and limp. I then add the Stroganoff seasoning packet and at the last minute, the sour cream.
Of course, I start the egg noodles before I start sauteeing the mushrooms. That way the noodles and the stroganoff will be done at the same time.
Oh, and be sure to use fresh mushrooms, not canned. and I buy decent sized mushrooms, and usually just cut them in half. That way they are not only tastier, but pleasing to the eye.

Why not make a huge pot of Quorn Spaghetti? Lots of spaghetti with some veg stock cubes, fry quorn pieces in a little oil, add chopped garlic, sweetcorn, mushrooms and anything else you like and add some Ragu sauce? Have it with some salad too. Really easy to make (wow - even i can make it!) Also try a big bag of tortilla chips, put them on a plate and sprinkle with grated cheese, put it into microwave for a minute til the cheese melts and add some salsa sauce over it.

Cous cous salad, with feta cheese (or an alternative of your choice), olives, peppers, tomatoes, cucumber, pine nuts, sunflower seeds, etc. Cutting the cheese and veg takes about five minutes and the cous cous can be done just by boiling a kettle, pouring the water over it and covering for about ten minutes. You can get flavoured cous cous too which can add to the finished article and make you look like a great chef. It's so easy even I can do it!!

Well, pasta is always the quickest thing to cook, but you can also stir fry fresh or frozen veggies in some oil (peanut, and seseme if you have them on hand - just make sure no one has peanut allergies).
There are premade stir fry sauces you can add to the pan and add a little garlic and ginger (powdered or fresh) and soy sauce and you have a tasty stir fry. Add rice and the meal is complete.

Vegetable Lasagne or vegetable curry is great. Veg lasagne:
Fry chopped onions (2) in olive oil
Add chopped courgettes/pumpkin or butternut/green and red peppers/broccoli or any other veg you like chopped
Tin of chopped tomatoes
Garlic
Tomato paste
herbs and spices
Cook till tender
Layer with lasagne sheets and make a cheese sauce.
Veg curry more or less the same but add a few spoons of curry powder/paste and cook or add some coconot milk at the end
Serve with rice
Both easy and yummy

You can never go wrong with Stir Fry. Boil some rice. Fry up some veggies, but not too long. Add tofu, soy sauce and spices like cayenne, ginger, or curry, and you'll have some happy vegetarians.

Don't go for salad or anything with Spinach and Feta...as nice as it is, it gets very annoying when its the only thing you can get in a restaurant. Curries (chickpea curry is great) or vegetable bakes (tomato, aubergine, pine nuts and mozarella is lovely!) Homemade veggie burgers are not too hard to make either.

Veggie Pizza. You can use the packaged biscuits or crescent rolls to make the crust. Bake. Then top with cream cheese as the sauce and your favorite fresh veggies( broccoli, cauliflower, onions...) as the topping and then cheese if you like. Use your imagination and have fun.
