Warm up whole wheat pita, chapati, tortilla, or flatbread; layer with 1/4-1/3 c of lowfat vegetarian refried beans, LOTS of chopped fresh cilantro, diced fresh tomatoes, romaine or baby spinach finely chopped, a sprinkle of lowfat shredded soy cheese (optional), and a small dallop of (vegetarian) Toffutti sour cream.

FOR UNBEATABLE FLAVOR-
To the beans mix in fresh, (finely chopped) steamed broccoli, red/green/yellow/ or orange bell peppers, yam, and (mashed) avacado.
Other possible veggies to include are (sauteed) mushrooms, onion, garlic, chilies; (steamed) corn, peas, spinach. If you like it spicy, a twist of fresh-sqeezed lime juice goes great with fresh tomatoes, hot chilies, diced onion and a little sprinkle of salt with the rest of the ingredients. Try various fresh vegetables, herbs and spices, beans or firm or seasoned chunks of baked or grilled tofu! Delicious!

First I brown the hamburger with some minced onion and garlic. Then I drain it and add some chili powder, garlic salt, oregano and pepper. I make the pico out of diced onion, tomato, and hot peppers-add chopped fresh cilantro and garlic powder, a little salt and pepper and lime juice. I get my oil pretty hot and fry corn tortillas until they just start to bubble, shaping them into taco shells with 2 forks while they are frying. Shred some cheese, have sour cream, salsa, fresh cilantro, pico and fresh hot peppers available for toppings. If I have time, I like to make the salsa from scratch too.
