They are both famous chefs...
Auguste Escoffier, who died in 1935 at the ripe old age of 89, was one of the best known chefs of haute cuisine at the end of the 19th. century (Among other things he created the Pêche Melba) about a century older than Bocuse who is still cooking
Paul Bocuse (born in 1926) has a fantastic and well known restaurant in Collonges on the outskirts of the city of Lyon, in France. He comes from a long line of chefs...his first restaurant has belonged to his family since the 18th. century!
He has written excellent cookbooks....
Has opened four more restaurants "Brasseries" in the center of Lyon, and The Pavillion of France at Epcot Center in Disney World, Orlando
In 1989 he was named "Chef of the Century".
