Ovo-lacto Vegetarian (no Meat from ANY animal but will eat dairy and eggs)

Bored with banana sandwiches, PB&J,
Simple Salads, salsa and chips, PB & Crackers,
yogurt and pudding

I usually have juice boxes and fruit/berries

Looking for something else, any ideas (except JUST EAT MEAT, b/c it makes me sick, thank you very much) appreciated.

PS. can use Microwave and have considered making my own pizza pops

Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

Try this veggie burger: ( I use gardenburgers by Morning Star Farm) Yummy!

Top a slice of whole wheat bread with hummus
Top that with the cooked veggie burger
Add a pineapple ring
Scoop a dollop of pineapple salsa on that
Add a slice of avocado
Top with spinach and another piece of bread

I usually serve with some fruit!

what about a cheese cassedillo?(sp)?, just grab some great cheese, butter the outside of a flour or corn (I prefer corn) tortilla, put it on a frying pan, throw the cheese inside(just like a grilled cheese sandwich). YOu could also add some salsa to spice it up. My kids love these.

There are alot of dif kinds of vegie meats out there, have you tried any? ( Even besides tofu.) Worthington, Morning Star Farms, and Loma Linda make many dif kinds of fake meat and some of them are really good. You can have vegie burgers, garden burgers, fake steak, fake scallops, fake chicken etc...
I like the vegie burger, vegie chili, vegie scallops and the vegie hot dogs called Big Franks and more. Google the brand names I gave you and maybe you can find them in your area. I can get some of it at almost any store here in Cali, especially Stater Bros, and Mother's Market. Some are frozen and some are canned. Good luck and hope you like it!

cottage cheese with apples, walnuts, and a little cinnamon

cheese and crackers

hummus and pita

melt cheese on tortilla chips then top with vegetarian refried beans, salsa, sour cream, avocado, etc. - VERY yummy and filling.
