I tried this recipe a few weeks ago and it's well nice (I'm a non veggie too) You could just bbq the slices of aubergine.
For the gluten free person - you can get gluten free pitas from tesco (and probably the specialist bit in other supermarkets)

Other things you can do are big portabello mushrooms, brush with crushed garlic and olive oil, bbqued and topped with houmous. You can also try things like corn on the cob, sweet potatoes, enoki mushrooms wrapped in foil. Or just go for quorn altrnatives. As long as you have lots of nice sauces and relishes - you can't go wrong with just bbqing any vegetable.

As a confirmed carnivore, I was surprised to find that BBQ asparagus is awesome - with or without a bit of BBQ sauce. Add some large flat-cap mushrooms - spread of course with garlic and butter and a whole heap of sliced potato and onions and your guests wouldn't realise they'd not seen meat.
If your vegetarians eat fish - as some do - salmon steaks are stunning and good snob value. Cheaper but every bit as spectacular are whole fresh sardines - split them and add a jar of tomato and basil sauce to the BBQ and they'll come running for more.
Don't forget that fruit are great on the Barby too. Try slices of fresh pineapple, apple, sliced banana (with chocolate buttons pushed into them). Peaches and pears with merachino cherry sauce - Oh how I go on! - Light that Barby and send me an invite!

Kebabs and Corn on the Cob keep vegetarians and meat eaters happy. If the vegetarians are fussy about their food being cooked close to meat, have one of those disposable barbecues especially for the veges

Portabella mushrooms (those big 5-inch diameter ones) are great to marinate and cook on the grill. They make a terrific meatless burger which you can serve on a bun with grilled onions, peppers and other favorite toppings.

Oh, red potatoes, sliced thin with quartered onions. Put them in a tinfoil pouch with butter, salt and pepper. Double wrap the foil or you will get a hole and loose the juices. Grill for 1/2 hour or more.

Have a side of vegetarian baked beans or hummus & pita is always a good idea. And you could grill a bunch of veggies on a stick too (but there's no protein in that).

If you are worried about burning meat, part cook it first in the oven then transfer it to the grill.
The important thing it to turn everything regularly.

chicken marinatedin plain yoghurt is always good, make your own dough so you can burn your own buns and corn on the cob with jacket potatoes are good for veggies.
make lentil patties for them.
Lentils, sweet corn, chopped onion, fresh herbs and bran to bind it all then roll into patties fry in oil and serve as normal burger patties.
And do plenty salads too. Pasta salad is always good, ditto rice salad

Peppers onions mushroom etc kebabs, great fun!!!! try mars bar bananas for kids -slice a banana chop up a mars bar put in the middle of two pieces of fruit, wrap in foil and bbq for 10 mins. yummy

I don't know about a "complete" meal, but throw some italian dressing on Zucchini strips and put them on the grill! They're fantastic! putting some sweet potatoes wrapped in foil on the grill is killer, too...
