Sub about a Tablespoon of dijon mustard for each egg called for in the recipe. That should work.

This is a good found recipe:
EGGLESS MAYONNAISE
3 T. lemon juice
1/2 c. soy milk
1/4 t. salt
1/4 t. paprika
1/4 t. prepared mustard
6 T. vegetable oil
Mix all ingredients into blender and spin...Makes 3/4 cup...

1/4 pound soft/sillk TOFU
2 teaspoons Chinese sesame oil
2 tablespoons cider vinegar
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/2 cup refined peanut or vegetable oil

Whip the first 5 ingredients in a blender or food processor. Keep the machine going, and gradually drizzle in the oil. When all oil is in you should have a nice, creamy, eggless mayonnaise.

This recipes doesn't taste just like mayo, but it's close. It's also runnier than traditional mayo. I use it for potato salad, salad dressing, veggie dip, etc...

I just improvise when i make it, so here are the basic ingredients:

Put these ingredients into a blender:

handful cashews
fresh lemon juice from about a lemon (or lime juice)
salt
olive oil (play around with it until you get a good texture)

It's really simple, but tasty. Use it immediately. It separates in the fridge and gets a little strange.

1 c Edensoy (Original)
2 2/3 c Oil
2 tb Cider Vinegar
1 tb Maple Syrup (or sugar)
1 ts Salt

Directions: Place soy milk in food processor (or blender). Put on lowest
setting. Drizzle oil into soy milk. Add other ingredients. I add about
the same amount of lemon juice in addition to the vinegar. Someatimes I add
one tablespoon of dry mustard. You've got to try adding basil and/or sage
and/or oregeno.

use a good aioli base of good olive oil (extra virgin, cold pressed) and lemon juice - then add spices to your taste
