Steak should always be rare, or medium rare at most. Anyone cooking their steak beyond medium rare might just as well eat a hamburger.
Most good steak restaurants will not cook a steak beyond medium, it's a waste of meat!

DO NOT ORDER WELL-DONE IN RESTAURANTS.
(you're a chef, table 3's sirloin came back to the kitchen, beacause rather than medium rare you cooked it medium. Are you going to throw that piece of meat away and increase your production costs or are you going to save it for the next customer that orders a well-done steak? And how about that ugly greying Ribeye you hesitate to cook for rare or medium-rare, is it going to waste or is it lurking in the fridge, just waiting for the next order for well-done?)
