Anybody got a tofu recipe that is healthy? I bake mine but i always put oil in the bottom of the pan to make it crispy. Any recipes would be appreciated!

Scrambled tofu~~

Spray pan with natural olive oil, sprinkle 1/2 tsp tumeric into pan. Heat on low and crumble a cake of firm tofu into pan. Mix and mash all together [put heat on medium] until tofu is bright yellow. Season with salt to taste. Add salt last as heat can take the taste of salt away. [Also, in a macrobiotic cooking class years ago, I was told that you need to heat tofu in order to be able to digest it better later.]

The above makes a quick, healthy breakfast combined with a piece of whole grain bread.

You can also make this into a delicious sandwich spread by adding mayo to it after it cools[ regular or eggless, 1/2 cup or less].

Another option if you need something kind of gourmet is to take the first mix, add chopped mushrooms, peppers, tomato, onion, etc to it, then sprinkle 1/2 cup of shredded cheese [dairy or soy both work well] into mix. Turn off heat and mix well. Let set for 10-15 minutes, then it will be a firm 'quiche'-type main entre when you serve it.

I've used all 3 of these variations for years, and my kids and relatives always love all of them.

Kung Pao Tofu

Serving Size : 1 Preparation Time :0:45
Categories : Tofu Dishes

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 pound extra frim tofu -- cubed
1 large red bell pepper -- chopped
1 large yellow bell pepper -- chopped
1/4 cup skinless peanuts
1 teaspoon sesame oil
2 tablespoons cornstarch
2 tablespoons water

combine below for marinade
1 cup sesame oil
1/3 cup rice wine vinegar
1/4 cup brown rice syrup
3 cloves garlic -- minced
1/2 cup tamari soy sauce
1 tablespoon ginger -- minced
1 bunch green onions -- chopped
1 teaspoon red pepper flakes
1 pinch cayenne pepper

Marinate tofu in above mixture for 1 hour
Save marinade for latter use
Bake tofu @350 for 20 minutes
Saute in sesame oil bell peppers until soft
Add peanuts, continue until toasted
Add marinade and simmer
Mix cornstarch and water, add to pan and stir until thickened
Remove from heat and toss in tofu.

NOTES : Can served with angel hair pasta

BROCCOLI TOFU PIE

1-1 1/2 lbs. chopped broccoli
4-5 tbsp. oil
3/4 c. chopped onion
3 tbsp. flour
1 c. stock or water
3/4 lb. tofu, drained, mashed
1 c. grated cheese
1/2 c. sunflower seeds
1/2 c. wheat germ
1/4 c. sesame seeds
Rice or bulgar wheat

Steam broccoli. Saute onion in oil until golden. Add flour, stir one minute until blended. Stir in stock and cook until thick and bubbly. Mix in tofu, cheese, sunflower seeds and broccoli. Pour into 2 quart casserole. Sprinkle Parmesan, wheat germ and sesame seeds. Dot with butter. Bake at 350 degrees for 30 minutes. Serve with rice or bulgar.

Tofu bagel spread
1/4 cup soft tofu
1/2 teaspoon maple syrup
1/4 teaspoon soy sauce
1/4 teaspoon olive oil

Mash all ingredients with a fork until smooth; smear on bagel.

I marinate the tofu for a day in soy sauce, ginger, minced garlic & a drop or two of honey.

Reserve the marinade, cut up the tofu, and stir-fry it with snow peas, strips of carrot, bell pepper (red & green), onion and zucchini. Put the heat on low and add the marinade to the stir-fry. You can add some flour or cornstarch to thicken the sauce up.

Serve over rice or add chow-mein noodles for a bit of crunch. Enjoy!

I make tofu sticks and dip them in ranch. Cut extra firm tofu into sticks, (think mozzarella sticks). In a small dish, put one egg worth of egg subsitute (or real eggs if you still eat 'em). In antoher dish mix break crumbs, parmesan cheese, and whatever spices you want (I got italian). Coat the tofu sticks w/ egg and then roll in the bread crumbs and place them on a nonstick baking sheet and bake at 400 for 25-30 min. They're not super crunchy or anything, but they taste good enough to me as a good source of protein and low fat. Dip 'em in whatever you want.

If you use extra firm tofu you can cut it into chunks, thread it onto barbeque skewers with your favorite vegetables. Cherry tomtoes, mushrooms, green pepper chunks, onion, broccoli, zucchini chunks, whatever you like. Then brush it with a glaze or marinate it. Then grill it outside. If you don't have a bbq, you can broil it in the oven. No oil needed, and lots of veggies.

Yes, I was going to say fried in olive oil with a little chili powder and turmeric to make it yellow. MMM, you are making me hungry!
