Thai food is my favorite; I love chicken satay, beef tiger tears, Thai Basil chicken, etc. It is spicy, low calorie, incredibly tasty cusine. One word of caution....if you are allergic to peanuts, STAY away. Most dishes include either peanut sauce or crushed peanuts. My 2nd favorite cusine is Vietnamese. It is high in flavor and low in calories. Meat is used more like a condiment, with lots of fresh herbs, and veggies. I particularly like Vietnamese spring rolls which are not fried. You prepare a platter of mixed ingredients which include shrimp, marianated beef strips, bean sprouts, scallions, mint leaves, an Asian vegetable that I think might be garlic tops, look like scallions. You boil some thin rice noodles.
You buy a package of rice papers...thin, nearly transparent circles. You soften the rice papers in a plate of hot water, add
all the ingredients and carefully wrap it into a roll. You prepare a dipping sauce made of lime juice, fish sauce, hoisin sauce, garlic powder, and a couple of squirts of red rooster hot sauce.
Heat and mix the sauce well, It's also good to have a tiny dish of crushed peanuts to sprinkle on ingredients before wrapping.

I like black pepper chicken,,,,,but alas,,,,,no place makes it the same....i like it cut in small pieces,,,,,juicy,,,,not dry.......with onions and jalapeno pepper slices, and of course, black pepper...only one in town here makes it that way........out of 10.... so they get my business............ this is if you mean dish.....if you mean restaurant......it would have to be a place in upstate New York.......they had over 80 hot dishes, over 25 appetizers, (egg rolls, etc.) and wings made about 12 different ways, 6 hot soups, and 2 tables of desserts. this was before sushi became popular..(but that stuff is not for me.) we would go there once a month and NEVER got thru tasting everything........once you put your favorites on the plate, you would have to go back for a taste plate.....with a little bit of the new things you want to try..........And they did not have small plates, either.....

sinigang (philippines) - pick your choice from pork, shrimp, or milkfish cooked in hot tamarind soup with tomatoes, raddish, and leaf vegetables to taste. Best with fish sauce.
tempura (japan) - large shrimps, or sometimes crabmeat, marinated with a healthy covering served with a sweet and sour sauce.
