Please post any good recipes that you have tried/havent tried but sound really nice, that would be really great. thanks in advance

Here is an easy tip if you have vegetarians coming to visit. Make what you might usually make - spag, chili, tacos, etc that has ground meat in it. The substitue a "ground meatless" product in for the ground meat. You will find this is an easy way to make a vegetarian meal.

Morning Star, Boca and many other companies make a product that looks and acts like ground meat. You can find it in the frozen food sections at most grocery stores.

Curried Corn and Plantain Stew
(This is an original recipe and one of my favorites)
1 Pound firm ripe plantains peeled and diced
1/2 Cup Vegetable Oil
1 Tablespoon Margarine
1 Large Onion Peeled and chopped
3 Cloves Garlic Peeled and minced
1 Tablespoon chopped Hot Peppers
1 Cup Bell Peppers Sliced
2 Tablespoons Tomato Ketchup
1 Tablespoon Curry Powder
2 Cups Coconut Cream or Milk
1/8 teaspoon Black Pepper
1/8 teaspoon Salt
2 Cups Corn
Method:
In a large skillet, heat the cooking oil until hot. Add plantains and fry stirring occasionally until golden brown. Remove from oil and drain on absorbent paper. Remove all but 1 Tablespoon of the oil from the skillet. To the skillet add the margarine and saute the onion, garlic and hot peppers for about 2 minutes until translucent. Add the bell peppers, ketchup and curry powder and cook stirring constantly for 1 minute. Add the coconut milk or cream and bring to a simmer. Add the salt and black pepper and simmer until reduce by half. Add the corn and continue simmering until the mixture becomes thickened and of a stew-like consistency, stirring occasionally. During the last 2 minutes of cooking add the reserved plantains. Stir and cook until done. Serve over rice or your favorite starchy dish.

Stuffed Aubergines - one of my favourites and I've tested it out on family and friends who said they liked it!! Really quick and easy to do aswell!

Large Aubergines (Half of one per person so 2 for 4 people)
Onion, Mushrooms
Tin of chopped Tomatoes
Clove of garlic
Mozzerella slices or any grated cheese

Cut the tops off the aubergines and cut in half lengthways. Score around the inside of the flesh with a knife taking care not to pierce the skins, scoop out the flesh with a spoon, chop and set aside. Brush insides of shells with olive oil and place in an oiled tray. Fry the chopped aubergine, onions and mushrooms, add the chopped tomatoes, salt + pepper, garlic, oregano, simmer for about 10 minutes until thickened. Put the mixture into the shells, not too full as you can put cheese in the middle then top with more mixture. Put more cheese on the top (and breadcrumbs if you want) then put in a pre-heated oven 200C/400F/Gas Mark 6 for 25 minutes or until the topping is golden brown. I usually serve mine with salad or pasta and garlic bread. Oh by the way I always have loads of mixture left over, you can either mix a bit in with the pasta or just keep in the fridge for the next day.

VEGETARIAN CHIMI CHANGAS

2 cloves garlic, chopped
10 medium mushrooms, sliced
1 large green pepper, sliced
1 medium-large onion, sliced
1 15 oz can black beans
1/2 cooked white or brown rice
1 cup mozzarella cheese, shredded
10" tortillas
cooking oil
garlic powder
black pepper
crushed red pepper
onion salt

In a frying pan saute garlic cloves, mushrooms, green peppers, onions until soft but still slightly crisp. In a bowl mix cooked rice, black beans together. In another pan heat about 1/2" inch of cooking oil. Warm the 10" tortillas in the microwave until soft. Place a 1-2 large spoonfuls of rice and beans, top with a large spoon of vegetables, and sprinkle with mozarella cheese. Season to taste with garlic powder, onion salt, crushed red pepper, and black pepper. Fold in the edges tightly, and place folded edges down in hot oil. Brown each side until golden brown. serve on a bed of lettuce and tomatoes topped with guacamole, sour cream and salsa. Very tasty!!

mousaka - grilled courgettes and aubergines in a tomato sauce with thick slices of haloumi on the top, grill till the cheese is golden, mmmmm, or spag bol using quorn mince(got eggs in though,so if you dont eat them Holland and Barrett do soya that works just as well), or vegetarian korma with baby new potatoes or paneer-you can get it from sainburys and just have to fry it for a few minutes before putting it in the sauce.
Ive been veggie all my life and have never run out of good exciting food ideas- you never need to eat meat again!!!Good luck and enjoy!

Mix veg

Its very simple too....
take chopped carrots 1/2 cup, cut 1 potato into cubes , fresh peas 1/2 cup, some chopped cabbage 1/2 cup, french beans 1/2 cup (if available), small onion finely chopped (optional), tomato 1 chopped and cheese cut into small pieces.
Seasoning chilli powder, cumin seeds 1/4 teaspoon and salt to taste
In a pan take 2 tablespoon of oil. Add cumin seeds till it crackles or turn golden add chopped onions, Saute till onion is slight golden. Add all the vegetables, red chilli powder and cheese cubes and saute for 4-5 mins. (ALL VEGS MUST BE PARBOILED) Add salt to taste and again saute for another 2-3 mins. Garnish with grated cheese.
You can also add fried almonds and cashews to it.(optional)

Ask the person whether he eats onion and cheese?

Carrot and peas
carrots, peas in equal amount. and potaoes chopped into cubes. Green bell pepper 1/2 cup and 1 teaspoon hot pepper. Garlic 2 cloves crushed, 1 onion finely chopped and curry powder 2 teaspoon and salt to taste, Oil 2 tablespoon.

In a pan heat oil add crushed garlic, onion and hot pepper and saute till onion turns golden. Add curry powder and all the vegs along with salt. Saute for 2-3 mins on simmer. And cover the pan and cook on very low heat and turn in between. Cook for 10 mins or until done on simmer.

Get a pizza crust. Chop garlic and soak it in olive oil. Then put half of the garlic/oil on the pizza crust. Top that with sliced tomatoes, fresh basil, and mozzerella. Then the rest of the garlic oil. YUM! (You can put any other kinds of veggies on it, too, such as spinach or sauted sliced peppers & onions)

Tofu bagel spread
1/4 cup soft tofu
1/2 teaspoon maple syrup
1/4 teaspoon soy sauce
1/4 teaspoon olive oil

Mash all ingredients with a fork until smooth; smear on bagel.

Just a note, if you are making the food for a vegan and you are not vegan yourself you may want to ask them if the pans and utensils you cook with need to be vegan as well. Meaning that cookware was never used to cooked animal products before. Its kind of like cooking Kosher food for Jewish friends, you need to see if they mind cooking food on non-Kosher cooking hardware.

You probalby need to find out exactly what they do/don't eat. Do they mean vegetarian or vegan? If vegetarian, do they eat cheese and eggs? Only free-range eggs? Only cheese that has been made with non-animal rennet?

sorry, we can be a bit choosey!
