Only One Vegan Banana Bread

3/4 cup brown sugar
3/4 cup white sugar
1/2 cup margarine, softened
3 very ripe bananas, smooshy-fied
2 cups flour
1/2 teaspoon baking soda
1/4 cup vanilla-flavored soy milk, mixed with
1 teaspoon apple cider vinegar
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon allspice
1/2 teaspoon salt
12 servings 1 8x4 loaf

1. Preheat oven to 350°F Spray a 8x4 bread pan with cooking spray or lightly oil.
2. Sift flour, baking soda, salt and spices together.
3. Cream the margarine and sugars.
4. Add bananas, soy milk and vanilla.
5. Add the wet ingredients to the dry.
6. Mix til combined.
7. Pour batter into pan.
8. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.

What's non-vegan about traditional recipes? It's not like they call for 1/2lb of minced pork or anything. What with all your soy milk, butter-flavored shortening, and egg substitutes, it should be easy.
