I would like a one pot meal, in an electric roaster, as my oven has crashed, and my son's b-day party is tommorrow?

BBQ beef sandwiches or Sloppy Joe. Get some lean ground beef, brown it and then put it is a crock pot. Add some BBQ Manwich sauce. Get some buns, chips, salads and fruit. You are good to go. It is not expensive and tastes great.
You can also do a " hot dog bar" get a lot of hot dogs and buns. Then put out the toppings so they can fix their own. Cut up onions, tomatoes, peppers, pickles and then get relish, celery salt, ketchup and mustard. It is cheap and fun!

This casserole can be "baked" in your roaster.It's filling and delicious and very inexpensive. A green salad and corn muffins make a complete meal.

Introduction
This is one of my daughter Erica's favorite dishes . I threw it together one day when I was in a hurry to get a hot meal on the table.This makes quite a big casserole.To dress this up, offer chopped onion, diced avocado, sour cream and tortilla chips.Also great served with corn muffins.

Ingredients
1 reg size can whole kernel corn
1 cup sliced black olives
1 large can diced tomatoes
1 large onion, diced
1 large can chili with beans
1 can kidney beans
1/2 tsp ground oregano
salt and pepper to taste
2 tsp chili powder
1 tsp garlic powder
1 pound lean ground beef
3 tbsp olive oil
1 small package rotini pasta (or elbow macaroni)













Directions
Step: 1 Drain juice from everything but the tomatoes and chili.
In a large pot saute onion in oil until soft.Add ground beef and cook, breaking up meat until no pink is visible.Add tomatoes and seasonings and simmer 10 minutes.Add remaining ingredients except pasta,and simmer 15 minutes to blend flavors.While the sauce is simmering, bring a large pot of salted water to a boil. Cook macaroni just till al dente. Drain but do not rinse.Add pasta to sauce and mix well. Pour mixture into a large buttered casserole.Bake at 350 for 30 minutes or until hot and bubbly.If desired top with shredded cheddar cheese the last few mintes of baking.

I don't have a roaster but I would guess that you could cook a chicken in it and season it with honey BBQ sauce.

If you have a microwave though you can make nachos by placing tortillas on a plate with refried beans on top. Heat it then pour salsa on that. Really good stuff.

Or you can wrap hotdogs in wet paper towels and zap them for 1 min 30 seconds each dog.

So many fast party things for the microwave. I love my microwave.

I'd go with the BBQ sandwiches! You can roast pork in a bit of broth...about a cup (or use bullion), cook it slow all day if you have the time. Then shred it up and add your favorite BBQ sauce. Minimal ingredients=easy and cheap and most people like BBQ. I did this with a pork loin roast and it turned out great. It was super moist and shredded beautifully. Check out the link below. Has anyone offered to bring anything? If so, you can have them bring a salad.

Jumbalah--one pot meal and it isn't alot of work
a pound and a half pork cut into chunks onions and green peppers or seasoned blend in the frozen section l bag should do. and some rice ---Saute your season blend in oil till sweet or to taste --pull them out into dish and drop your meat seasoned to taste brown quickly or med high after browned add back your onions and in about 3 more minutes add rice about 4 cups brown a bit when it starts sticking add cold water to cover rice and bring to a boil tasting ad what ever it needs cover a cook till rice it done--feed about 10 or so more rice the more meals
