Enchilada sauce and Chihuaua cheese. (not from the Chihuaua dog, from the city of Chihuaua) Mole is also a good sauce, but it is spicy.

a beef or beef/bean usually has a chili or chili sauce, while a chicken burrito usuallly will get a sour cream sauce. White cheese could be monterey jack, but it also could be a goat cheese depending upon the quality of the food. The better the restaurant, the more likely it is goat cheese.
