Try eating in a lot as many restaurants have limited items for vegetarians. My first suggestion is trying stirfrys. They are easy to make. Just cook rice, fry up any veggies, add tofu soy sauce and any spices that sound good like curry, ginger, etc.
Another easy dish is to boil pasta and put in towards the end veggies like broccoli, spinach, zucchini, and of course tofu if you feel you need the extra protein.
One more easy dish is pita pizzas. All you need is to put tomato sauce, veggies, and cheese & or cheese substitute, put it in the oven at 300 or so for about 15 minutes and wallah.
As far as supplements go I suggest spirulina as it is a complete protein and is high in iron and B12, two vitamins most vegetarians have problems getting enough of.

If you're only commiting for one month, I don't think you have much to worry about. I've been a vegan for almost 7 years and the adjustment was quite easy. Look for healthy soy alternatives (milk, cheese, beef etc.) the good ones taste exactly the same. Keep protien levels up by eating legumes, hot curry seems to cure the craving for beef (don't ask me why, I have no idea but it works). Experiment! Enjoy the variation! Embace the chance to experience a new way of life, and above all have fun with it!

It is all about mind-set. So-called meat substitutes don't work for me. I w.as successful in college because of a friend, and didn't miss meat at all. Peanut butter, occasionally, but healthier alternatives are beans and walnuts. Not a health nut here, just know what I like.

Eat lots of pasta. That should be close to your normal food as an omnivore.
If you do try one of those "meat substitutes", put lots of condiments on it to hide the taste.
Why do you have to be a vegetarian for a month, anyway?

Beans and peanut butter (for protein so you don't pass out)
Rice milk or soy milk (for your Kashi cereal)
Nayonnaise (for your lettuce and tofu cheese sandwich)
Rice Dream (for the midnight snack)
Amy's Shephard Pie (like chicken pot pie but all veggie)
Boca Burgers
Vegetable protein "sausage" in the produce section
Lots of fresh fruits and veggies. Trust me, you can do this, and you'll feel loads better at the end of 30 days.

i did. it was tough cause im a big meat eater...but experiment...try vegetables youre not used to or have never eaten before...try the veggie and soy burgers they have in the frozen food section...try tofu!!! its delish.
there are a ton of recipes online if you just google "vegetarian recipes"

Veggie burgers, spaghetti, tofu lasagna, pizza, baked potatoes, corn on the cob, oatmeal, grilled cheese sandwiches, egg salad sandwiches, subs, pitas, stir-fried veggies, rice, fettucine, bean burritos, bean tacos, vegetable chili, french fries, yogurt, green salad, macaroni salad, coleslaw, potato salad, breads, nuts, fruit, veggies and dip, tortillas and salsa, nachos and cheese, crackers, sunflower seeds, veggie dogs, etc.
One month is easy. I've been veg. for 14 years.

go to your supermarket and check the vegi section, you'll find a large amount of decent foods. try the BBQ meatless boneless patties. they taste better than the meat ones.
