Recipe: Thai Fish Balls
Similar Categories: Thai, Fish, Balls
500g White Fish Fillets
2 tsp Red or Green Thai Curry Paste
pinch of Salt
1 Tblsp Fish Sauce
1 Tblsp chopped Coriander Leaves
Oil for deep frying
Method:
Chop the fish roughly into chunks then process in food processor
until it makes a paste. Add the fish sauce, curry paste and salt and
blend for another 30 seconds til well mixed.
Transfer to a bowl and mix in the coriander.
Roll into small balls and chill in the fridge for half an hour or so
to set firm.
Deep fry for about 2 minutes, drain on kitchen paper, stick a
toothpick into each and serve with Sweet Thai Chilli Dipping Sauce.

It is absolutely necessary to chill the fish ball before pan frying or the patties will fall apart while cooking.
Ingredients
1.5 ground white fish (hake, cod, and halibut are all good choices)
2 Tbls. Thai or Vietnamese fish sauce
2 Tbls. fresh cilantro, finely chopped
1.5 Tbls. Thai red curry paste (available in small cans at Asian markets)
or substitute a few Tbls. mild to medium hot curry powder
1 egg, lightly beaten
1 teas. sugar
1/2 cup green bean, cut into very thin, little round slices
peanut or vegetable oil for pan frying
Preparation
Use food processor to grind chunks of fish. (Do not over process and turn into a paste.)
Combine all ingredients.
Form into about 2 doz. small balls.
Refrigerate for half hour.
Flatten balls into patties.
Heat oil and fry about 2 minutes a side - use non-stick pan to reduce amount of oil needed - only turn once.

Fish balls or fish cake is a processing food from fish meat.
Just like meatball in Pizza.
You can find fish balls not only presented in Thai food, but also in Japan, China, Hong Kong, Taiwan, Korean, Malaysia, Singapore, Indonesia and southeast Asia.
They are my favorite.

Fish ball - (we call it Yu dan in Cantonese) originated in Chao Chow / San Dau area (in Guangdong Province China), fisherman's dish on the boat. They chop the white fish meat finely, mix with seasoning and beat the paste with strength (to add air into the mixture), sequeeze the paste with hand to make a meat ball and boil the balls with hot water to pre cook, the fish balls can be stored in the freezer for quite long time.
There're a lot of Chiu Chow Chinese immagrants in Thailand and they brought this to Thailand.
