I don't think the question should be can anyone eat 48 bananas, but rather why would anyone try? Don't sound like too much fun to me plus it would affect your health. Challenges are not worth your well being.

Yes, especially if you're physically active. Bananas aren't acidic, so they don't give you the shits when eaten to excess. They're almost but not quite a complete food. If you lived in a subtropical or tropical place where bananas, avocados, coconuts, sugar cane and pineapples grow everywhere, you could eat for next to nothing. Bananas and avocados between them are almost a balanced diet.
