Enoki- known as enokitake are prized for their tiny caps, delicate falvour and crisp texture

Straw mushrooms- cultivated on rice straw, these dark mushrooms have a meaty texture

Mushroom in Japanese is - ki no ko

shiitake (fresh - nama or dried - hoshi)
enoki (white in colour)
