I'm having a party this weekend. What kind of vegetarian dish should I serve?

Go spanish:

Vegetable Frittata (tortilla) with hummus and black olives -
We made this last week,
Par boiled baby potatoes (skin on), sauted in an oven proof 9" pan to make the bottom layer
The day before we grilled dinner, at the same time we threw on a couple of whole red peppers and blackened them, an eggplant sliced lengthwise and some onions on a skewer - all of this could be done in the over / on the cooktop instead.
Peel and de-seed the peppers.
Layer the veg over the potatoes.
Mix 8 lightly beaten eggs with 1.25 cups grated parmasen and maybe some fresh herbs. Pour over the veg. Cook over a low heat for around 15 mins the into the oven or under the broiler to finish.
Cool, invert onto a chopping board.
Cut into cubes. Spoon a little hoummus onto the top and finish with half an olive.
Benefit - can be made in advance.

Gazpacho shots:
In a blender put 2 green pepper (italian frying if possible), half a seedless (english) cucumber, half a sweet or red onion, 1lb fresh ripe tomatoes, 2tblspns sherry vinegar (cider will do), 0.25 cup extra virgin olive oil. Pulse blend. Add chopped cilantro / chilli sauce / salt to taste.
Serve chilled in shot glasses. Tip: Add the onion to the blender first so it chops up small.

Bruschettas:
Toast ciabatta or similar, then options are endless:
Top with manchego cheese and quince paste (membrillo)
Or brush with olive oil and rub with garlic and fresh tomato.
Goats cheese and olive paste (tapenade) or black olives.

For the meat eaters you can easily add some fried chorizo to the frittata or bruschetta.

Pasta Salad
Ingredients: 1 pkg Broccoli florets
1 pkg cherry tomatoes
1/2 red onion
1/2 can olives (sliced)
1 box tri-color pasta
1 bottle Italian dressing (Wishbone)


How to Prepare:
Boil pasta and broccoli florets (if florets are frozen). Chop onion into small pieces or omit from recipe if you’re not fond of them. Add all of the ingredients together. Use dressing until all of pasta is saturated. Pasta will absorb most of the dressing while it cools. Put in fridge for 1 hour or until pasta is completely cold. Stir & Enjoy!!

Prep Time: 15 minutes
Cook Time: 10 minutes
Servings: 10-12.

Vegetarian lasagna sounds good... you can make a multil veggie platter with different types of dips... potato skins or stuffed with rice and seasoning.... also hallowed peppers with your choice of stuffed ricotta cheese or meat.... I guess from appetizer to entre the possibilities are endless.... I'm not very good at this but I though I'de maybe give you something that might help get the creative juices flowing... have a great party

This might sound ridiculous but when I invite my friends over I like to serve what I call "ghetto pies". You know those hostess pies with the fruit filling? Your party might be more upscale, but if you want to crunk it up this might work. Hope this helps. Have a nice party!

A cous cous salad, or rice salad is nice. Fresh cut up fruit- crackers and cheese- veggies and dip. If it's a dinner party- fish/salmon (unless you don't even eat fish)- or a pasta dish with a nice salad. Boccincchi (sp?) cheese and tomato salad (basil, olive oil, garlic, salt and pepper) is nice.

Veggie pizza:

Spread crescent rolls on a baking sheet and bake until golden brown. (11-14 min @350)

Top with:
1c mayo
1 8oz pkg cream cheese
1 package dry ranch
(Mix these ingredients together to make the spread)

The top with:
Shredded carrots
Shredded cheddar cheese
Green onions
Broccoli
Cauliflower

It's yummy yummy yummy!!

I did this for a culinary display, it went over well. Grill zucchini strips(sliced longways, salt, pepper, olive oil) roll them up and stuff them with either herbed goat cheese or a seasoned ricotta. If you want to go totally vegan, then grill some red and green peppers and stuff with those... garnish with chive snips... Good luck!

No, I'm in top college & we shouldn't have events or w.e however the college is all into this vitamins stuff now. I believe that at a Christmas celebration in college, a youngster will have to be equipped to devour chocolate galore & all of the goodies that they wish. It's all facet of being a child! :-D

Assorted veggies with spinach dip, or hummus dip (it comes in a ton of flavors!), rice thins, spinach and artichoke dip (that's a warm dip) for appetizers....
You can so veggie skewers, tomato basil mozzarella skewers, grilled marinated veggies....just a few of my favs.

what sort of party is it? If it's more of a formal kind of sit down affair you could make eggplant lasanga, mmmm I'm not a vegatarian but I love that more then traditional lasanga.
