I'm not sure what you are talking about unless its salsa. It could be a number of things though, more spices, as some Mexican cooks add dried oregano to their salsa which will make it dark. Cooking doesn't really make it much darker than fresh, uncooked salsa.

probably because they roasted some of the tomatoes in the salsa
