It's hard to pick just one. Kung Pao Chicken, Sweet & Sour Pork, Beef or Chicken Chow Mein or Szechuan Chicken are all mighty tasty. Don't forget the egg rolls on the side.

As far as chinese dishes go, dim sum is absolutely delicious. I suggests get "Ha Cheong-Fun" it's little shrimp dish. There's a little bit of everything, you can even get dessert. You can eat a bunch of different things since you get a like steam dish with contents of typically 3-4 items. Chrysanthemum tea goes very well with dim sum. Another favorite of mines is Seafood Chow Mein, BUT this is not the american version. The Chinese version is when they deep fry a portion of noodles and pour over seafood such as shrimp, scallops, other stuff and some vegetables in a somewhat clear sauce over the fried noodles.
For Thai food, I would recommend Pad Thai, it's like stir fried noodles, with meats(Shrimp, Chicken, Beef and/or Pork), eggs, tofu, bean sprouts, scallions, cooked with tamarind sauce, served with a lime wedge. By the way, not all Thai food is hot, just make sure you don't order your food as "Thai Hot".
Vietnamese food is delicious as well. If you want soup, go for Pho! It will be served in a big bowl and very filling. They also have these spring-like rolls, but not fried. It's got rice vermicelli in it and meats and cilantro, stuff like that wrapped in a rice wrapper. Just don't use alot of 'nuoc nam' with your food, it's essentially fish sauce, vinegar, sugar, chili and other components, you will end up being thirsty!
For a little nice surprise, get a box dinner at a japanese restaurant, all the food are placed in different compartments. It's cute and entertaining!

The chinese food in america does not compare to mainland chinese cuisine but if the restaurant you are going to is really CHINA chinese ask for:
Ning Meng Ji (Neeng Mung Jee) Lemon chicken
Guo Bao Rou (Guwah Bow Row) Sweet/sour pork equivalent
chun bing (choon beeng) spring rolls
all of these are delicious northern foods

My favorite is dim sum, where the people push the carts around with all sorts of things on them, dumplings of all sorts, turnip cakes, fried rice, steamed greens, sweets, deep fried dumplings, you name it. You get the little plates or steaming tins with 3-4 pieces and they add it to your bill (average $2.00-5.00 in a regular restaurant) and keep nibbling while you sip you jasmine tea and chat with all the people you are sharing with , as you spin the middle of the table around to pick up another tidbit! YUM!!

Oh, god, not chinese food!! I've been eating that crap for the past 23 years straight (you know...being chinese myself) and it's the most vile and disgusting thing in the world! My body rejects it like a virus! After 42 minutes of eating it, I would be running to the washroom. Ugh...try eating it for the next 23 years straight and tell me how you like it then.
